Adobo Chile and Apricot Chicken Recipe
Think cooking green and healthy has to be boring or expensive? Nope. Nada. So here’s a recipe I thought I’d share with you that’s super easy to make, yet doesn’t necessarily have to cost a lot of cash:
Chicken with Chipotle and Apricots Served over Organic Greens
- 2 organic chicken breasts
- Chipotle Chili in Adobo Sauce
- Apricot Preserves
- Salad Greens
This is super easy and convenient to make. First, cut up enough chicken for your crowd (this recipe serves 2) into small pieces. Saute in oil (I use canola for chicken, but feel free to substitute olive oil or other oils).
When the chicken is getting near done (with just 3-4 minutes left to cook through), add 2-3 spoonfulls of apricot preserves and 1 spoonful of chipotle chili in adobo sauce (more if you like spicy foods, less if you don’t). Stir through and let simmer with the chicken until cooked through and the sauces have liquified.
Serve over salad greens (I grew these organic salad greens in a pot). The heat of the chicken and sauce will wilt the greens. Perfect for salad, though, because you don’t need salad dressing….the sauce acts as a sweet and spicy dressing on the greens.
This recipe just goes to show that you can have super easy foods that are healthy for you, but packed with flavor. If you grow the greens yourself, they just cost pennies. And depending on how much preserves or chipotle chili you use, a can can last for many meals. So the major expense is the chicken.
Choosing organics for the other ingredients reduces antibiotic and pesticide usage, and is just healthier for everyone involved.
